Whatcha got cookin?

My friend Susan is always posting yummy recipes in her blog, so I thought that I”d post a recent favorite in mine just for fun.

Raspberry bar cookies
½ cup packed light brown sugar
1 cup flour
¼ tsp baking soda
1/8 tsp salt
1 cup rolled oats
½ cup butter softened
¾ cup raspberry jam (the homemade kind is best! If you live near me, stop by I have a freezer full)

1. Preheat oven to 350. Grease an 8 in. pan
2. Combine brown sugar, flour, baking soda, salt, and oats. Rub in butter using hands to form a crumbly mixture.
3. Press 2 cups of the mixture into the bottom of the pan, spread the jam to within ¼ in. of the edge.
4. Sprinkle remaining crumb mixture over the top and lightly press down into the jam.
5. Bake for 35-40 min until lightly browned, allow to cool before cutting.

Jory’s rating: 5 stars, better than cobbler. (which is a pretty big compliment in his book)
My rating: put the pan away before I eat the whole thing.
